Caramel & Peanut butter coconut slice


Okay in all honesty these were meant to be balls not a slice, but effort factor got in the way and a slice at 11pm on a school night won!

These are sweet, and delicious! If the sweetness aspect is too much you can take out the caramel sauce and add more peanut butter instead.

100g butter
1 1/4 cups brown sugar 
2 cups desiccated coconut 
1 cup walnuts, finely chopped
1/3 cup peanut butter
3 teaspoons caramel sauce 


1. Melt the butter in a medium saucepan over low heat. Add the sugar, coconut, walnut, caramel sauce and peanut butter and store until well combined.

2. Line a rectangular baking tin with baking paper and pour in mixture. Make sure you cover the base and spread evenly.

3. Refrigerate for 2 hours. Cut into bars and serve.
