Super green salad

I now have a new favourite salad, I’d eat this all the time given the chance!

Recently at work I have been getting heaps on zucchinis and the only thing I really knew how to make with them was zucchini slice….boring.
This salad is healthy and delicious and make from raw ingredients so the nutrients stay in the veggies.
INGREDIENTS
1 cucumber cut into cubes
1 handful baby spinach leaves
1 small broccoli head cut into small florets
Dressing ingredients
1 avocado, roughly chopped, seed removed
1/4 cup Greek yoghurt
2 splashes of white wine vinegar
1/2 cup olive oil
2 splashes lemon juice
1 teaspoon caster sugar
3 seedless chilli olives 
1 garlic clove, peeled
1 tablespoon parsley
1 tablespoon basil



METHOD


1. Chop up the cucumber and broccoli as required. Set aside in a large bowl. Add baby spinach leaves to bowl.
2. In a food processor, blend together all dressing ingredients. Check consistency, if too thick and more oil and stir through.
3. Pour dressing over chopped veggies and serve!
