Thai Prawn Curry

And just like that it’s Easter weekend! This year is flying by already!

I never realised how much I cook with meat, until this weekend! Seafood is a good alternative to meat, and one that I don’t tend to use a lot, so cooking this meal was a nice change!
This meal is very tasty, and only takes 30 minutes max!
INGREDIENTS
2 Tablespoons oil
1 Onion, chopped
2 garlic cloves, chopped
3 Tablespoons red curry paste ( I used Sharwoods)
400g chopped tomatoes
1/2 coconut cream
300g prawns, cleaned and without tails


METHOD

 
1. Heat oil in saucepan. Add onion and ginger, and cook until softened, approx 2-3 minutes.
2. Store in curry paste and stir for a minute. Add tomatoes and coconut cream. Bring to boil for 5 minutes. If too thick add a dash of water.
3. Add prawns and cook for 10 minutes or until prawns are cooked through.
Serve with plain rice and chilli. Enjoy!
