This delicious beef curry is perfect for the cooler night we have been having!
INGREDIENTS
2 tablespoons oil
500g beef, diced
1 onion, finely diced
1 cup broccoli florets
1 cup mushrooms, roughly diced
4 garlic cloves, finely diced
3 potatoes, roughly diced
3 tablespoons lemon juice
1 cup beef stock
1 tablespoon ground coriander
1 tablespoon ground cumin
1 teaspoon turmeric
1 teaspoon chilli powder
2 tablespoons tomato paste
METHOD
1. Add oil to fry pan and sear beef until browned. Set aside.
2. Turn on pressure cooker and set to sauté high temp setting set to 5 minutes – keep lid off. Add 1 teaspoon oil, onions and garlic to pressure cooker. After 3 minutes add beef stir and let sit.
3. Meanwhile in a bowl combine coriander, cumin, turmeric, chilli and garlic with lemon juice. Add to beef mixture and stir to combine well.
4. Add potatoes, broccoli and mushrooms. Stir to combine.
5. Add tomato paste and beef stock. Stir to combine again. Set pressure cooker for meat setting at 30 minutes. Seal and start.
6. Serve with rice and yoghurt. Enjoy!
