Happy 4th of July!!!
The perfect accompaniment to all the BBQ’s happening is this potato salad!
INGREDIENTS
1kg baby potatoes, quartered
4 hard boiled eggs, shell removed and sliced
1 cup bacon, diced
1 red onion, finely sliced
1 cup whole egg mayonnaise
1 tablespoon Dijon mustard
1/2 cup spring onions, diced
1 bunch parsley, finely diced
METHOD
1. In a large saucepan, place potatoes in and cover with water. Boil over medium to heat heat until tender. This should take approx 20 minutes.
2. Cook bacon until crispy.
3. Combine mayonnaise, mustard and red onions in a bowl.
4. Drain potatoes and place in serving bowl. Add mayonnaise dressing into the bowl. Mix to combine.
5. Add bacon, spring onions and parsley. Mix again to combine.
Serve and enjoy!
