Sour cream mango cake

Trust me, you’re going to love this cake. Like die and go to heaven. Soooo good!!!

I would generally serve this naked (sans icing) but it was for a dinner so….


2 mangoes, flesh only.

2 cups self raising flour

2 eggs

1/2 teaspoon baking soda

1/2 cup butter, room temp

3/4 cup white sugar

1/2 sour cream

Pinch of salt

1 teaspoon vanilla extract

Icing– optional

3 tablespoons almond milk

2 cups icing sugar

1 teaspoon vanilla extract


1. Preheat oven to 160c. Spray cake tin.

2. Sift flour into bowl. Add baking soda and salt.

3. Best together butter and sugar until pale and creamy.

4. Add in vanilla extract, sour cream and eggs. Mix well.

5. Add flour in three parts, mixing well each time. Add in mango pulp and fold to combine.

6. Bake in oven at 160c for 40 minutes.

7. Take out of oven and let cool.

8. While cake is cooling, make icing.

9. Combine all icing ingredients. Top cake when cooled. And desired toppings.
