Coconut Fish Curry

This fish curry is mild, so everyone can enjoy it, even if you aren’t the biggest seafood fan! Packed with vegies too! INGREDIENTS 3 pieces basa fish fillets, roughly diced 2 brown onions, finely diced 1 yellow capsicum, deseeded and cut into strips 1 green capsicum, deseeded and cut into strips 1 cup vegetable stock 1 cup coconut milk 1 tablespoon fish sauce Soft tofa 1/2 lime 2 teaspoons yellow curry paste METHOD 1. Preheat a saucepan with oil on low for 1 minute. Add onions and cook for 1 minute. 2. Add capsicum and curry paste to the saucepan, mixing gently so vegetables are well covered. 3. Add coconut milk, fish sauce, vegetable stock & lime juice to the saucepan. Stir and let simmer for 3 minutes. 4. Add tofu and fish. Let simmer for15 minutes, gently stirring occasionally. 5. Serve with rice and yoghurt. Enjoy!
