I’ve always stuggled cooking with chicken mince, I always end up reverting to an Asian influence. This is a quick weeknight throw together!
550g chicken mince
3 tablespoons lime or lemon juice
2 tablespoons sriracha sauce
2 tablespoons fish sauce
1 red onion, finely diced
1 brown onion, finely diced
1 teaspoon garlic, minced
1/3 cup sweet chilli sauce
- Cook 2 cups of rice accordingly to packet. If you want more flavourful rice, go half coconut milk, half water.
- Add a splash of oil to a pot and brown onions and garlic for two minutes. Add mince, ensuring that you break it down well while cooking. Cook until mince is browned.
- Add all other ingredients, except rice, and let simmer at a low heat for 5-10 minutes stirring occasionally.
- Serve on top of rice and enjoy!
