Tomato tortolini soup

Another winter warmer meal for you! Pasta and soup together

INGREDIENTS

1 can diced tomatoes
1 brown onion, diced
1 litre water
1 heaped tablespoon chicken stock
1 tablespoon tomato paste
1 packet feta and vegetable tortellini
1/2 feta block, crumbled
4 rashers bacon, diced
oil

METHOD

1. Place water, diced tomatoes, onion and chicken stock in pot. Bring to the boil and then turn down to a simmer for 30-40 minutes.

2.Add in tortellini and continue simmering for 15- 20 minutes.

3. Meanwhile add a splash of oil to a fry pan and fry diced bacon until cooked to liking.

4. To serve, ladle 1-2 scoops of soup and sprinkle and handful of crumbled bacon and feta over the top.

Serve and enjoy!
