Spring has arrived and personally I’m loving the warm days and the cooler nights! They won’t be around for long so savoring them while they’re here!
This is another great make ahead meal (can you tell I love these!) for busy weeknights.
2 Chicken breasts
2 brown onions, diced
2 cloves garlic
1 1/2 cups chicken stock
1 can diced tomatoes
2 zucchinis, sliced and diced
1 cup diced carrots
1. Heat oil in fry pan and brown chicken.
2. Turn on slow cooker to high setting and add onion, garlic and chicken to slow cooker.
3. add vegetables, canned tomatoes and stock. Stir to combine.
4. Cover with lid and cook in slow cooker for 4-5 hours.
Season serve and enjoy!
