Tomato, vegetable & lentil soup

Whether you believe tomato is a fruit (Wikipedia) or vegetable is your call, but if you say vegetable (like myself) I’ve specified tomato in the title because it’s the stronger flavour! 


With winter fast approaching, this soup is straight forward to make for quick work lunches!


Ingredients 


3 carrots

3 celery

1 parsnip

1 onion

2 potatoes

2 cups water

1 tablespoon vegetable stock

1 Tomato paste sachet

Lentils (pre cooked)

Cream (optional)


Method


  1. Add water, vegetables and stock to a pot and set at medium heat for an hour. The mixture should be gently bubbling away. If water decreases, add more.
  2. When vegetables are softened, blitz with a stick blender until smooth. Add tomato paste. If you don’t want a strong taste, only add half the sachet.
  3. Add lentils and stir to combine.
  4. Stir in cream, serve and enjoy!
