Fettuccine Carbonara

Nothing like a bowl of creamy goodness on a winters night! 

This recipe is super easy to make on a weeknight and makes enough for lunch the next day!

INGREDIENTS
375g fettuccine pasta 
30g butter
6 rashers of bacon, diced
1 tablespoon garlic paste
1 teaspoon chilli paste
2 eggs
2 egg yolks
3/4 cup thickened cooking cream
1/2 cup grated Parmesan
Handful of finely chopped basil
METHOD
1. Cook pasta according to packet instructions.

2. Whisk together eggs, egg yolks, cream, and parmesan. Set aside.

3. Add butter to a hot frypan. Once melted add bacon. Cook for one minute, then add garlic, chilli & chopped basil. 

4. Drain pasta and leave in saucepan. Add both the egg mix and the bacon mix the the saucepan and stir through for 2 minutes to thicken sauce.

Serve with extra Parmesan on top.
