250g beef mince
1 small brown onion
1 tablespoon minced garlic
1 zucchini, grated
1/2 red capsicum, finely diced
1 carrot, finely diced
1 tablespoon brown sugar
2 tablespoon cider vinegar
2 teaspoons Worcestershire sauce
410g can tomato purée
6-8 pack seasame seed bread buns, lightly toasted
1. Heat a splash of olive oil in a pan. Add onion and garlic and cook for 1 minute. Add mince and cook for 5 minutes.
2. Add the zucchini, capsicum and carrots. Cook for 2 minutes, or until vegetables are just tender.
3. Add mustard powder, chilli powder, vinegar, worcestershire sauce, sugar and tomato purée. Bring to the boil, then simmer for 20 minutes, stirring occasionally.
4. Butter bread rolls and spoon 2 large scoops of mince mixture into each bun. Serve with a side of your choice!
