Happy Tuesday! After cherry picking on the weekend I found the perfect recipe to bake for the office so that everyone could have some… Move over cherry pie, it’s sharing time!
100g chopped butter
200g white chocolate buds
3/4 cup Caster sugar
3/4 cup Self raising flour
3/4 cup plain flour
1 cup pitted, halves cherries
1. Melt butter and chocolate in a microwave safe bowl for 90 seconds. Allow to cool for 10 minutes.
2. Once cooled, sift in sugar and flours. Add egg and mix well.
3. Turn oven on to 180c. Line a rectangular pan with baking paper and pour the mixture in, spreading evenly. Mixture should be thick. Add cherries base side down on top of mixture pressing in firmly.
4. Bake for 30 minutes. Allow to cool and them slice. Enjoy!
